SOAVE CLASSICO D.O.C.

Nestled in a remote corner, Carbonare is a wonderful vineyard of old pergolas which greets the morning sun, overlooking a steep sided valley. In the past, farmers used to harvest wood and peat from here to produce coal (in italian carbone). This plot, located halfway up the hillside with its exposure to the East, is characterised by fresh air coming down from the Val d’Alpone and its little Dolomites.
The natural balance of the plants and the adjacent streams showed us that water flows underneath, a precious resource in order to produce a great white wine. The basalt, which characterizes the Soave Classico grounds, has great chromatic complexity here, fading from black to green, red and orange. The strong character of the vineyard is evident in the grapes: joyful aromas of citrus, effervescent acidity, mineral freshness.

Tasting notes

The wine is richly flavoured, with an important acidic backbone to provide balance and support its aromatic character. Citrus flavours are complemented by savoury notes to add complexity, with a sharp, fresh finish.

Area of production

Soave Classico, Veneto. Altitude 250 mt above sea level. East exposure. Igneous basalt (volcanic) soil.

Production process

The grapes are delicately crushed, and the juice then remains macerating with the skins for 3-12 hours. After 24 hours of static sedimentation, the must undergoes its alcoholic fermentation in stainless steel, after which monthly bâtonnage is carried out for one year. It is bottled in November and then remains in our cellars for a few months before being released onto the market.

Fun facts

The Garganega variety was introduced in the Classic area 2,000 years ago by the Romans. The label represents a detail of the artwork “Bouchonnier – Corker’s shop”, showing a demonstration of the cork-cutter’s skills and practices. This drawing is taken from the ”Encyclopédie, ou Dictionnaire raisonné des sciences, des arts et des métiers” by Diderot et D’Alembert, edited in the XVIII century.
